Ingredients:

  • 2 lbs sweet potatoes, peeled and cubed into 1-inch pieces
  • 1.5 lbs chicken breast, cubed into 1-inch pieces
  • 2 tbsp extra virgin olive oil
  • 1 tsp sea salt
  • 1/2 tsp cracked black pepper
  • 4 cloves garlic, minced
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme, finely chopped
  • 1/2 tsp smoked paprika

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, toss the cubed sweet potatoes and chicken breast with olive oil, salt, and pepper.
  3. Fold in the minced garlic, rosemary, thyme, and smoked paprika, stirring until every piece is evenly coated.
  4. Spread the mixture across the baking sheet in a single layer, ensuring pieces are not touching to allow air circulation.
  5. Roast for 25–30 minutes until the chicken is opaque throughout and the sweet potatoes have mahogany-colored edges.
