Ingredients:
- 2 lbs sweet potatoes, peeled and cubed into 1-inch pieces
- 1.5 lbs chicken breast, cubed into 1-inch pieces
- 2 tbsp extra virgin olive oil
- 1 tsp sea salt
- 1/2 tsp cracked black pepper
- 4 cloves garlic, minced
- 1 tbsp fresh rosemary, finely chopped
- 1 tbsp fresh thyme, finely chopped
- 1/2 tsp smoked paprika
Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- In a large mixing bowl, toss the cubed sweet potatoes and chicken breast with olive oil, salt, and pepper.
- Fold in the minced garlic, rosemary, thyme, and smoked paprika, stirring until every piece is evenly coated.
- Spread the mixture across the baking sheet in a single layer, ensuring pieces are not touching to allow air circulation.
- Roast for 25–30 minutes until the chicken is opaque throughout and the sweet potatoes have mahogany-colored edges.
