Ingredients:
- 2 tbsp brown sugar
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/8 tsp cayenne pepper
- 2 lbs boneless skinless chicken thighs
- 1/2 cup chicken broth
- 1/2 cup BBQ sauce
- 1 tbsp olive oil
Instructions:
- Pat the chicken dry with paper towels to ensure the rub adheres.
- In a small bowl, whisk together the brown sugar, paprika, garlic powder, onion powder, salt, pepper, and cayenne.
- Coat the chicken liberally with olive oil, then toss in the rub until every inch is mahogany-colored and well-coated.
- Pour the chicken broth into the Instant Pot liner.
- Place the seasoned chicken in the pot.
- Pour 1/2 cup of BBQ sauce over the top of the chicken.
- Seal the lid and set to High Pressure for 12 minutes for chicken thighs or 8–10 minutes for chicken breasts.
- Allow a natural release for 5 minutes, then manually release the remaining pressure.
- Remove the chicken from the pot.
