Ingredients:

  • 2 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp cayenne pepper
  • 2 lbs boneless skinless chicken thighs
  • 1/2 cup chicken broth
  • 1/2 cup BBQ sauce
  • 1 tbsp olive oil

Instructions:

  1. Pat the chicken dry with paper towels to ensure the rub adheres.
  2. In a small bowl, whisk together the brown sugar, paprika, garlic powder, onion powder, salt, pepper, and cayenne.
  3. Coat the chicken liberally with olive oil, then toss in the rub until every inch is mahogany-colored and well-coated.
  4. Pour the chicken broth into the Instant Pot liner.
  5. Place the seasoned chicken in the pot.
  6. Pour 1/2 cup of BBQ sauce over the top of the chicken.
  7. Seal the lid and set to High Pressure for 12 minutes for chicken thighs or 8–10 minutes for chicken breasts.
  8. Allow a natural release for 5 minutes, then manually release the remaining pressure.
  9. Remove the chicken from the pot.
