Ingredients:
- 2 lbs sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
Instructions:
- Preheat your oven to 400°F (200°C). Peel the sweet potatoes and dice them into uniform 1-inch cubes.
- Place the cubed potatoes in a large mixing bowl. Drizzle with olive oil and sprinkle the seasoning blend (salt, pepper, garlic powder, and smoked paprika) over the top. Toss vigorously until every cube is glistening and evenly coated.
- Line a large heavy-duty baking sheet with parchment paper. Spread the potatoes in a single layer, ensuring they aren't touching.
- Roast for 25–30 minutes. At the halfway mark, flip the potatoes using a spatula to ensure an even, golden-brown finish. Remove when the edges are charred and the centers are soft when pierced with a fork.
