Ingredients:
- 4 Halibut fillets, 6 oz each
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup panko breadcrumbs
- 1/3 cup grated parmesan cheese
- 3 cloves garlic, minced
- 1 tsp dried Italian seasoning
- 1 tbsp fresh parsley, chopped
- 1 tsp lemon zest
- 2 tbsp unsalted butter, melted
- 1 tbsp fresh lemon juice
Instructions:
- Preheat the oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- Pat the halibut fillets completely dry with paper towels. Lightly brush each fillet with olive oil and season with salt and black pepper.
- In a medium mixing bowl, combine panko breadcrumbs, grated parmesan cheese, minced garlic, dried Italian seasoning, chopped parsley, and lemon zest.
- Press the top of each fillet firmly into the crumb mixture, packing it down to create a thick, even crust.
- Place fillets on the prepared baking sheet and bake for 12–15 minutes, or until the internal temperature reaches 130°F to 135°F (54°C to 57°C) and the crust is golden brown.
- While the fish rests for 2 minutes, whisk together melted butter and fresh lemon juice. Drizzle the mixture over the hot crusts immediately before serving.
