Ingredients:

  • 4 Halibut fillets, 6 oz each
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup panko breadcrumbs
  • 1/3 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • 1 tbsp fresh parsley, chopped
  • 1 tsp lemon zest
  • 2 tbsp unsalted butter, melted
  • 1 tbsp fresh lemon juice

Instructions:

  1. Preheat the oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Pat the halibut fillets completely dry with paper towels. Lightly brush each fillet with olive oil and season with salt and black pepper.
  3. In a medium mixing bowl, combine panko breadcrumbs, grated parmesan cheese, minced garlic, dried Italian seasoning, chopped parsley, and lemon zest.
  4. Press the top of each fillet firmly into the crumb mixture, packing it down to create a thick, even crust.
  5. Place fillets on the prepared baking sheet and bake for 12–15 minutes, or until the internal temperature reaches 130°F to 135°F (54°C to 57°C) and the crust is golden brown.
  6. While the fish rests for 2 minutes, whisk together melted butter and fresh lemon juice. Drizzle the mixture over the hot crusts immediately before serving.
